5-Minute, No-Cook Bean Salad

Here’s a perfect way to have a satisfying dinner this summer when it’s hot outside and you want a healthy meal in a jiffy. It’s a 5-minute, no-cook bean salad!

The beauty of this salad is that it’s quick, healthy, and delicious. Most of the ingredients are probably in your pantry and fridge right now. If you’re missing an ingredient or two, leave it out and you’ll still have a delicious salad.

With the beans and tofu, this salad is packed with protein. Enjoy it this summer!

5-Minute, No-Cook Bean Salad

Serves 2


1 can beans, drained and rinsed
1/2 block tofu, drained and diced
2 stalks celery, sliced
1/4 red onion, sliced
1/2 yellow or orange pepper, sliced
2 medium tomatoes, chopped
1/4 cup Italian parsley, basil, or cilantro, chopped
1 tablespoon olive oil
1 tablespoon red wine vinegar
Salt and pepper to taste


Add all ingredients in a mixing bowl, and toss to combine. So fast, yet so delicious!
